Breaking news!!! I'm still alive! It has literally been so long since I've baked and blogged that I've forgotten how to do everything. Seriously. When I went to edit my photos, half of them were out of focus because I've apparently forgotten how to use my camera...
Here is a quick recap of the past few months: I've since moved to San Francisco and have already finished my first quarter at Annahttp://www.blogger.com/profile/18158521819259605368noreply@blogger.com0tag:blogger.com,1999:blog-4684575000335355435.post-23862666626197329222012-02-21T10:49:00.003-08:002014-03-13T23:27:19.313-07:00The Hostess With The MostestOh boy, busy busy month February is. I think every weekend this month, I've been busy with something. Today is the first day I've had some down time in awhile so I'm trying to use this as an opportunity to get some much needed work done, including this blog.
I do have some news, but I can't decide if it's good or bad yet. I recently met with an admissions adviser at the Fashion Institute of Annahttp://www.blogger.com/profile/18158521819259605368noreply@blogger.com0tag:blogger.com,1999:blog-4684575000335355435.post-53257806311735494322012-01-08T01:56:00.000-08:002012-01-08T01:59:37.288-08:00Rainbow Cupcakes
A close friend of mine has been requesting some rainbow cupcakes for well over a year now, so I finally gave in and made them for her. As pretty as these turned out though, I'll have to admit that I don't plan on doing these again for quite some time, as it is very time consuming. And if you're semi-OCD like me, it could require a lot of patience as well as a steady hand. I mixed up and Annahttp://www.blogger.com/profile/18158521819259605368noreply@blogger.com2tag:blogger.com,1999:blog-4684575000335355435.post-83695384683186175182011-12-24T05:55:00.000-08:002011-12-27T19:16:30.928-08:00December's Cupcake Of The Month: Dark Chocolate and PeppermintI hope you are all having a lovely December so far. Earlier this month, I was knee deep in work, tutoring, and finals, so of course, I welcomed my break with open arms. And even though I can't say that I've been particularly productive this break (what with my long to-do list of reading two book series, going back to the gym, and other miscellaneous tasks that I've been putting off), I have been Annahttp://www.blogger.com/profile/18158521819259605368noreply@blogger.com3tag:blogger.com,1999:blog-4684575000335355435.post-72780641722094365622011-12-05T15:47:00.000-08:002011-12-27T19:08:55.195-08:00Pumpkin Muffins Using Only Two IngredientsAll this recipe calls for is one box of yellow cake mix and a couple of cups of pumpkin puree. Can it get any easier than that? You don't even need eggs or oil, and you can spice it up (figuratively or literally) any way you want! I added some pumpkin pie spice, cinnamon and chocolate chips to mine and they were delicious!
I don't have any pictures for this recipe, but everything is Annahttp://www.blogger.com/profile/18158521819259605368noreply@blogger.com0tag:blogger.com,1999:blog-4684575000335355435.post-8963336756653984922011-11-24T00:10:00.000-08:002011-11-24T00:19:45.129-08:00Pumpkin Chocolate Chip CookiesIn all honesty, I made these because I made some more pumpkin cupcakes for dinner with my family and that left me with some leftover pumpkin puree. And also because I love chocolate chip everything.
And I'm going to keep this post super short because I've got to run back and finish baking, but if you have any pumpkin puree leftover from your Thanksgiving dinner, make these cookies. Seriously, Annahttp://www.blogger.com/profile/18158521819259605368noreply@blogger.com0tag:blogger.com,1999:blog-4684575000335355435.post-53887070305685761872011-11-23T23:58:00.000-08:002011-11-24T00:18:59.909-08:00Vegan BrowniesAnother recipe for National Vegan Month! And another recipe proving that just because no animal products were used, it doesn't mean it's going to taste bad! I'm not vegan myself (obviously), but I don't like that people jump to the conclusion that just because something's vegan, it's going to taste terrible.

All this time flying by has made me realize just how much I procrastinate. Seriously. My original plans for November were to get my hair cut, dye my hair again, bake two goods for National Vegan Month, catch up on reading, and respond to an invitation to meet up with a friend. So far, I've baked these cupcakes and kind of responded to the invitation. Well, at least where I live. Last week, we had our first rain of the season, and after so many months of 90+ temperatures, it was really nice to be able to put on a jacket and a scarf. I didn't really appreciate that it rained two days after I washed my car though... but that always happens to me, so I don't really know why I'm surprised anymore.

It's crazy how fast time is flying by. Since my last recipe post in August, I've been busier than ever with school, babysitting and trying to keep up a social life so it was nice to finally be able to take some time out this weekend and not think about anything else but the recipe at hand.
Now, it's been quite a while since I've attended Annahttp://www.blogger.com/profile/18158521819259605368noreply@blogger.com5tag:blogger.com,1999:blog-4684575000335355435.post-64435069290879516872011-08-20T19:56:00.000-07:002011-09-04T18:26:55.720-07:00Banana Cream PieLet me start off by saying that I am not a big fan of pie. At all. Don't ask me why, I'm just not. So having said that, it's no surprise that this is my first time making banana cream pie. Normally, I wouldn't have even thought of making a pie, but it was my dad's birthday and this is one of his favorite desserts so I thought "why not?" Now, I love him and all, but serving him anything I make is Annahttp://www.blogger.com/profile/18158521819259605368noreply@blogger.com0tag:blogger.com,1999:blog-4684575000335355435.post-26659054329203905312011-08-08T02:16:00.000-07:002011-10-01T15:20:12.522-07:00August's Cupcake Of The Month: S'moresHappy early National S'mores Day! Yup, you read right. There's a National S'mores Day and it falls on August 10th.
To celebrate this classic campfire treat, these cupcakes were made with graham cracker crumbs, filled with rich chocolate ganache and then topped with a marshmallow-type frosting. I mean, c'mon, Harry and I practically grew up together (practically... okay, maybe I'm just being dramatic)! And now the movies are coming to an end too! I'll admit it, though, I don't really love any of the movies. Yeah, there were some good ones, but then there were some really bad ones too (i.e. the sixth movie).Annahttp://www.blogger.com/profile/18158521819259605368noreply@blogger.com0tag:blogger.com,1999:blog-4684575000335355435.post-50384730905050808862011-06-30T18:28:00.000-07:002011-10-15T23:33:02.555-07:00June's Cupcake Of The Month: Lemon Meringue
Inspired by the cupcakes one can find in San Francisco's Cako and pushed by my love for all things citrus-y, I decided to finally make some of my own!
Since lemon meringue is one of the very few desserts I actually crave, I have a feeling I'll be making these often. After all, I'd much rather spend a couple hours in the kitchen than I would spending a couple hours driving Annahttp://www.blogger.com/profile/18158521819259605368noreply@blogger.com1tag:blogger.com,1999:blog-4684575000335355435.post-85662418294837080202011-06-25T20:02:00.000-07:002011-06-26T14:55:28.478-07:00Tiramisu CupcakesThese cupcakes were baked for a baby shower after I found out the mommy-to-be's favorite cake was tiramisu. I tried to find a way to incorporate the sponge biscuit part of the classic tiramisu but unfortunately, I couldn't figure anything out. But nonetheless, I got a lot of compliments about how much the cupcakes tasted like the cake so I'm still very happy with the outcome.

All the rolling and cutting and re-rolling and cutting... it can get repetitive. I'm also not the best at decorating them either... but with all of that aside, these cookies came out pretty cute! Learning how to make royal icing definitely made life easier too. Seriously, you should try it.

Well, certainly not me, which is why it was no surprise that the mojito would become one of my favorite cocktails as well as the inspiration for my next cupcake.
Unfortunately, I couldn't really taste the rum in the cake or the frosting, which is why I'm calling these Almost-Mojito Cupcakes. 'Tis the season for spring dresses, sunny days and blooming flowers. And did I mention it's also National Strawberries Month?

By request from a friend though, I came up with my own version of this cookie-turned-cupcake.

Not March Madness...
Not St. Patrick's Day...
It's those damn Girl Scout cookies.

You know, sort of like Irish Car Bombs, but in cake form.
These probably would've made more sense being March's cupcake but it was a good friend's 21st birthday and what better way to celebrate a boozy birthday than with boozy cupcakes?
The Ingredients (makes about 2 dozen):
For the cupcakes:
-1 cup unsalted butter, softened
-1 cup stout beer
-3/4 cup unsweetened cocoa powder
-2 cups flour

Seriously. As I'm typing this, mine are sitting in the freezer as we speak, firming up and getting ready to be rolled in delicious almond-y goodness.
The only things you have to really pay attention to are the toasting of the almonds (if you're planning on toasting them yourself, which I highly recommend) and boiling the heavy cream. I used to make these every year a couple days before winter break for friends and they were always a hit but I haven't made these for quite some time now.
